The classic poached egg and avocado on toast
Good morning, avocado lovers!
Start your day right with this easy yet nutritious breakfast recipe. Perfectly poached eggs and creamy mashed avocado on toasted bread are a classic breakfast delight that will keep you fueled and satisfied throughout the morning.
Ingredients:
- 2 slices of bread (your choice, such as whole grain or sourdough)
- 2 large eggs
- 1 ripe avocado
- Salt and pepper to taste
- Optional toppings: Parmesan cheese, chopped red onions, tomatoes, red pepper flakes, or fresh herbs
Instructions:
- Toast the bread slices to your desired level of crispness.
- While the bread is toasting, fill a large saucepan or skillet with water and gently simmer.
- Crack one egg into a small bowl or ramekin.
- Use a spatula or spoon to Create a gentle whirlpool in the simmering water.
- Carefully slide the cracked egg into the centre of the whirlpool. Let is cook for about 3 minutes, or until the whites are set but the yolk is still soft and runny. Repeat with the second egg.
- While the eggs are poaching, cut the avocado in half and remove the pit. Scoop out the flesh into a small bowl. Mash the avocado with a fork until it reaches your desired consistency.
- Season the mashed avocado with salt and pepper to taste.
- Once the eggs are done poaching, carefully remove them from the water using a slotted spoon and place them on a clean kitchen towel to drain excess water.
- Spread the mashed avocado evenly onto the toasted bread slices.
- Gently place a poached egg on top of each avocado-covered toast.
- If desired, Sprinkle with additional toppings, such as cheese, red pepper flakes, or fresh herbs.
- Serve immediately and enjoy!
Tip: Opt for perfectly ripe organic Hass or Fuerte avocados that offer a slight give when gently squeezed, yet steer clear of those that feel mushy or fibrous inside. If you encounter any bruised or discoloured areas upon slicing, simply remove and dispose of them before mashing the remainder.

Healthy avocado chicken salad
Light, flavourful, and easy to make, this healthy avocado chicken salad is perfect for your next barbecue, homemade or potluck lunch.
Ingredients:
Chicken:
- 1/2 lb (225g) chicken breast, boneless, skinless
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon salt and fresh cracked black pepper, to taste
- 1/4 teaspoon smoked paprika
- 1/8 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/8 teaspoon chilli powder
- 1/8 teaspoon ground cumin
- 1/8 teaspoon oregano
- Juice of 1/2 lime
Lime Juice Dressing:
- 3 tablespoons lime juice
- 2 tablespoons extra virgin olive oil
- 1/4 teaspoon salt and fresh cracked black pepper, to taste
- Crushed red pepper flakes (optional)
Salad:
- 1 English cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 medium red onion, thinly sliced
- Coriander or parsley
- 1 medium avocado, pitted, peeled, diced
Instructions:
Chicken:
- In a mixing bowl (or Ziploc bag), combine all the blackened chicken seasonings and 1 tablespoon of olive oil. Add the chicken breast and toss to coat.
- Heat a nonstick griddle pan over medium heat and brush it with 1 tablespoon of olive oil.
- Once the pan is heated, add the seasoned chicken breast. Cook for approximately 3-4 minutes on each side or until the chicken is cooked through. Cooking time may vary depending on the thickness of the chicken breast. Remove from the pan and allow it to cool.
Lime Juice Dressing:
While the chicken is cooking, whisk together the lime juice, olive oil, salt, pepper, and crushed red pepper flakes (optional) in a small mixing bowl.
Salad:
- Once the chicken breast has cooled, cut it into small cubes.
- In a large bowl, combine the diced cucumber, halved cherry tomatoes, thinly sliced red onion, and diced avocado.
- Add the cubed chicken to the bowl.
- Drizzle the lime juice dressing over the salad ingredients.
- Toss the salad well to combine all the ingredients and coat them in the dressing.
- Serve the Healthy Avocado Chicken Salad immediately or refrigerate for a few hours before serving.

Tip: To keep the avocado from turning brown, coat it in lemon or lime juice. If your chicken breasts are too large, slice them horizontally to make chicken cutlets for quicker cooking.

- 1/2 cup milk
- 1/4 cup white sugar
- 1/2 teaspoon vanilla extract
Instructions:
- Mash the ripe avocado with an electric mixer or in a food processor until smooth.
- Gradually blend the milk, white sugar, and vanilla extract until well combined and smooth.
- Chill the avocado dessert in the refrigerator for about 20 minutes before serving.
